Ingredients

2 pounds ground beef (or 1 lb beef, 1 lb ground Italian sausage)
1 cup fresh bread crumbs
1/2 cup finely grated Parmesan
1 heaping tablespoon chopped basil
1 heaping tablespoon chopped parsley
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1/2 finely chopped onion
2 eggs
3 tablespoons olive oil

Directions

  1. In a large bowl, mix all ingredients except olive oil by hand.
  2. Roll meat between palms to form a ball that is firmly packed but not compressed.
  3. Repeat, making each meatball about 2 inches in diameter.
  4. In a large skillet heat olive oil over medium-high heat.
  5. Brown well on bottoms before turning.
  6. Continue cooking until browned all over.
  7. Place cooked meatballs on a plate as each batch is finished.
  8. Let meatballs cool slightly and add to pasta sauce.
