Homemade Paleo Mayonnaise

One of the hardest parts of switching my eating to Paleo is letting go of some of my favorite condiments. Luckily, many of the store-bought condiments can be recreated healthier in the kitchen.

Here is a simple and healthy homemade Paleo-friendly mayo made with olive and coconut oils. This taste so much better than store-bought.

Ingredients
  • 4 egg yolks at room temperature
  • 1 Tbsp fresh squeezed lemon juice
  • ½ tsp dried mustard
  • Salt and pepper (to taste)
  • ⅔ cup cold pressed extra virgin olive oil
  • ⅔ cup coconut oil,warmed
Instructions
  1. Whisk egg yolks in a bowl until smooth
    Add fresh lemon juice, dried mustard, salt and pepper and blend until mixed
  2. SLOWLY add oil while blending, starting with cold pressed extra virgin olive oil. Start with a drop at a time until mixture emulsifies.
  3. Continue adding slowly until both oils are blended.
  4. Place in a glass jar.
  5. Store in fridge up to 1 week.

Yields 4+ servings
