
One of the hardest parts of switching my eating to Paleo is letting go of some of my favorite condiments. Luckily, many of the store-bought condiments can be recreated healthier in the kitchen.
Here is a simple and healthy homemade Paleo-friendly mayo made with olive and coconut oils. This taste so much better than store-bought.
Ingredients
- 4 egg yolks at room temperature
- 1 Tbsp fresh squeezed lemon juice
- ½ tsp dried mustard
- Salt and pepper (to taste)
- ⅔ cup cold pressed extra virgin olive oil
- ⅔ cup coconut oil,warmed
Instructions
- Whisk egg yolks in a bowl until smooth
Add fresh lemon juice, dried mustard, salt and pepper and blend until mixed - SLOWLY add oil while blending, starting with cold pressed extra virgin olive oil. Start with a drop at a time until mixture emulsifies.
- Continue adding slowly until both oils are blended.
- Place in a glass jar.
- Store in fridge up to 1 week.
