
Last night I made a big ol’ batch of pumpkin butter after the kids went to bed. I had read a recipe that used the Williams-Sonoma brand of pumpkin butter. I have had apple butter in the past but I had never tried pumpkin butter myself. But after reading the ingredients and doing a little research, I came up with this healthy pumpkin butter recipe that used ½ the sugar of traditional pumpkin butter recipes. Honestly, this recipe is seriously so simple to make you are going to wonder why you never made it before. It is so straightforward and delicious that you might even find yourself making multiple batches…just for yourself. But try to contain yourself from eating the whole jar by yourself.
This pumpkin butter is delicious on a thick, piece of toast, a flaky biscuits, Ritz crackers or for an unparalleled treat try it on a graham cracker! You can even try it on apple slices for a great low-calorie snack! Oh my goodness, this stuff is seriously a little piece of heaven. Give this pumpkin butter as a great housewarming or as a hostess gift or just keep it for yourself. I will be using this for a fantastic low carb holiday treat, Pumpkin Protein Shake.

I love pumpkin–anything pumpkin and I just know I would love this! I am also thankful that it is low carb!! I am definitely going to try to make it!
